In the true spirit of end-of-year retrospectives and new year resolutions, allow me to start with some highlights from 2011:
We had some pretty amazing salads with duck breast, chicken liver, ham and/or poached eggs, and sometimes roasted vegetables. I think the salads were best when we had ripe Blueberries or Raspberries to add; I love fresh fruit in salads.
The discovery of Kingfish lead to a number of lovely meals, and lead to the recent discovery that Kingfish doesn’t freeze well. The meat turns oily and unpleasant, but it is lovely when cooked fresh. I prefer a la Grecque, which I define as being shallow-fried in olive oil, with lots of course black pepper, garlic and red chilly.
I made my first real Duck Confit just a few days ago, and we thought that was jolly nice. This is the style of fast food that I like: preparation takes some time but very little effort. The cooked meat is preserved in the fat and keeps for weeks or months, and simply needs re-heating and a little colouring in a frying pan.
Bread and sauces generally improved in variety and quality, I think. I like.
Hmm. I have now scrolled my 2011 list of meals up and down twice, and found not as many highlights as I had hoped. There isn’t much difference from the previous year. Therefore, the resolution for 2012 is to add more novelty meals to the menu.
